Don't know about a pottery furnace, but in a furnace used to heat your home, a thermocouple does not sense temperature. As the pilot flame hits the tip of the thermocouple, a small electrical voltage is generated. (Measured in DC millivolts) The voltage goes to the gas valve, which holds the pilot valve open as long as it is receiving the proper voltage. If the pilot goes out, voltage is lost, gas valve turns off pilot gas.
