A ceramic vinegar crock?

I am a ceramic designer from Argentina, and I am currently interested in making a stoneware vinegar crock. I know there should be a spigot which enters the ceramic crock through a cork (to ensure tightness, I guess...). But don´t really know how the upper lid should be. Should it also be 100% airtight, or on the contrary, should it just sit like a teapot lid does, allowing some air circulation?

I think it would depend on what it will be used for..... Brine pots date way ba in American history... they were used to pickle things. These crocks did not a a spigot and had a lid that just set on top to 1. allow air exchange and 2. keep things out, such as bugs and dirt.

I would be concerned about having a brine pot that was air tight. I think that the brine and pickling could cause a pressure build up in something air tight and may cause it to blow up.......
