Hard-paste porcelain has always been preferred and considered the better choice among porcelain makers. This type of porcelain was first developed from petuntse and kaolin by the Chinese. Hard-paste porcelain is said to resist melting better than other types of porcelain. For this reason, it can be fired at higher temperatures, making them beautiful, yet sturdy enough to last a lifetime. A ceramic vinegar crock?
I am a ceramic designer from Argentina, and I am currently interested in making a stoneware vinegar crock. I know there should be a spigot which enters the ceramic crock through a cork (to ensure tightness, I guess...). But don“t really know how the upper lid should be. Should it also be 100% airtight, or on the contrary, should it just sit like a teapot lid does, allowing some air circulation?
I think it would depend on what it will be used for..... Brine pots date way ba in American history... they were used to pickle things. These crocks did not a a spigot and had a lid that just set on top to 1. allow air exchange and 2. keep things out, such as bugs and dirt.
I would be concerned about having a brine pot that was air tight. I think that the brine and pickling could cause a pressure build up in something air tight and may cause it to blow up.......
