Recipe for Indian style mixed pickle?
I want to make some mixed people because I absolutely adore it. Was thinking of using onions, chillis, mangoes, carrots, lemon and lime as I've seen many variations of this in the shops. Can anyone give me an authentic recipe as I've looked on the internet and they're all completely different so I don't know which one to pick! Thank you ever so much in advance.
Onion Pickle
Ingredients :
Big Onion - 100gm
Small Onion - 100gm
Tamarind - 50gm
Red chilli - 50gm
Fenugreek - a pinch
Oil - 4tbs
Curry leaves
Salt
Method :
Fry the fenugreek and powder it. Grind tamarind, salt and red chilli well and keep aside. Add the sliced big onion and small onion and grind again. Add the powdered fenugreek and mix well.
Heat oil in a pan. Season the mustard and curry leaves. Add the ground ingredients and saute well for about 5 to 10 minutes. When cool, store in an air tight bottle.

Mango Pickle
Ingredients
12 medium size raw mangoes
300 gms mustard powder
250 gms red chili powder
250 gms salt (not more than 150 to 200 gms if using iodised salt)
50 gms fenugreek seeds
1 1/2 kgs sesame seed oil
optional - peeled garlic flakes or Bengal gram whole/chic. peas) picked and cleaned
Method
Leave the raw mangoes in water for 15 minutes and dry them with a clean cloth. Cut them into pieces of 1 1/2 to 2 inches. Discard the seed / stone and the onion type layer on the pieces. Clean the cut pieces with dry cloth.
Mix the mustard powder, red chili powder, salt and fenugreek seeds together in a big basin. Add one cup of oil and mix to a consistency that can be held in a fist. Sprinkle the mango pieces also with a little oil. Take a few mango pieces at a time and mix them well with mustard, chili, salt mix and put them in a ceramic jar or a big plastic container. Repeat the process till the mix and the mango pieces are over. Towards the end if a little mix remains it can be added on top. Pour 1 inch oil above it and cover it with a lid. Tie a neat thick cloth over it and store it. Mix it well on the third day. Taste it and if need salt may be added at this stage. Those who want to add garlic or chickpeas can do so now. Take some Avakaya separately and mix a handful of chickpeas in some and garlic in some. Since chickpeas and garlic take oil add extra oil.
Tips
For those who have never tried making this delicacy at home a few tips may come in handy.
1. Make sure to keep ready a reasonably big ceramic jar or a plastic container, clean and dry and with a proper lid.
2. Mangoes must be cleaned and dried properly. Wash and dry hands. No dampness should be allowed to creep in at any stage.
3. Remember that the quantity is more on the day it is made. On the third day the level comes down. Mix it thoroughly. Many make it in a big container, since it is more convenient to mix well. Later it can be transferred to smaller bottles or jars.

Carrot Pickle
Description : Recipe Carrot Pickle In Oil
Cuisine Style : Kerala
Servings : 10 Adult(s)
Ingredients
Carrots - 1/2 kg
(peeled and cut into length wise pieces)
Onions - 2 nos
(made into a coarse paste)
Ginger garlic paste - 1/2 tbsp
Red chillies(Kollamulaku) - 2 nos
Coriander powder - 2 tsp
Mustard powder - 1 tsp
Fenugreek(Uluva) powder - 1/4 tsp
Cumin(Jeerakam) powder - 1/2 tsp
Jaggery(Sharkkara) powder-1 1/2 tsp
Lemon juice or vinegar - 3 tsp
Chilly powder - 2 tsp
Mustard seeds - 1/4 tsp
Cumin seeds(Jeerakam) - 1/4 tsp
Black gram(Uzhunnuparippu) - 1/4 tsp
Fenugreek(Uluva) seeds - 1/4 tsp
Asafoetida(Kayam) - A pinch
Turmeric powder - A pinch
Cooking oil - 1 cup
Curry leaves - A stem
Salt - As reqd
Preparation Method
1)Heat oil in a wok.
2)Add mustard seeds, cumin seeds, fenugreek and blackgram.
3)Once the seeds splutter, add asafoetida, broken red chillies and curry leaves.
4)Add onion and ginger garlic paste.
5)Fry till it turns golden brown. Switch off the flame and allow it to cool.
6)Along with the carrot pieces, add all the powders, salt and lemon juice to the wok.
7)Mix well.
:- Store in an air tight bottle.

LEMON PICKLE SOUTH INDIAN RECIPE
Ingredients:
750 grams Lemons (Nimbu)
3/4 cup Salt (Namak)
1 cup Mustard Oil (Sarson Ka Tel)
1/2 teaspoon asafoetida
3 teaspoons Mustard seeds (Rai/Sarson)
3/4 cup Lemon (Nimbu) juice
2 teaspoons Red chili pepper (Lal Mirchi)
3 teaspoons fenugreek seeds, powdered
1/2 cup Sugar (Cheeni)
How to make lemon pickle South Indian:
- Cut the lemons into eight pieces each, rub salt and keep for one week in a jar.
- Shake daily.
- Heat the oil in a pan, remove from the fire, cool a little, add crushed asafoetida and mustard seeds and cover the pan.
- Cool a little, mix lemon pieces, lemon juice, fenugreek powder, chilli powder and sugar.
- Keep for one week before serving.

Lime Pickle
This is a Kerala Style Lime Pickle. Lime Pickle is often served with rice and curries in Malayalee homes. There are different versions of Lime Pickle. This is my style of making it.
Ingredients:
Limes -16
Water -4 cups
Pickle masala powder -4 tbsp
Vinegar -12 cup
Ginger -3 tbsp chopped
Garlic -3 tbsp chopped
Green chillies -5 chopped
Curry leaves -3 srigs
Salt -2 tbsp or to taste
Gingelly oil -4 tbsp
Method:
- Boil the water in a large vessel.
- Put off the fire and add the limes to it.
- Keep them immersed in hot water for 15 minutes.
- Drain and wipe dry.
- Cut each lime into 8 pieces.
- Heat oil in a kadai and add ginger, garlic, green chillies and curry leaves.
- Fry till the garlic turns light brown.
- Add the pickle powder, salt and vinegar. Stir and immediately put off the fire.
- Add lime pieces and mix well.
- Cool to room temperature.
- Transfer the pickle to sterilized jars.
- Let it stand for 2 or 3 weeks before using.
- If there is no oil on top, turn the jar sideways so that the oil coats the lime pieces on top.
- Do this every two days.
- Refrigerate the pickle after opening since no preservative is added to it.

Green chilli pickle (South Indian Style)
Ingredients:
1/4 kg Green chillis
1/2 cup Lemon juice
1 tsp Red chilli powder
1/2 tbsp Fenugreek seeds
1/2 tbsp Mustard seeds
1 tsp Turmeric Powder
2 tsp Roasted cumin powder
Salt to taste
3 tbsp Vegetable oil
Instructions:
1. Cut green chillis into thin slices and dip in lemon juice. Keep for an hour.
2. Powder the mustard seeds and fenugreek seeds and mix with red chilli powder, turmeric powder, cumin powder and salt.
3. Make the oil slightly warm and add all the above spices.
4. Add this to the green chillis dipped in lemon juice and stir well.
5. Put the chilli pickle in a glass bottle and use after 4-5 days.
